It does not get any more simple or delicious than this pan seared Chilean Sea Bass. I have to say, Chilean Sea Bass is my all time favorite fish. It is naturally buttery and melts in your mouth without any fuss in the kitchen at all. Just a quick sear in extra virgin olive oil, lemon, salt and pepper and it is absolutely perfect!
The cooking time will vary based on the thickness of the fish. But it should take no more than 15 minutes.
Note: Admittedly, Chilean Sea Bass can be quite pricey. If your looking for the next best thing as a substitute that is a bit less expensive, sablefish (aka butterfish or Black Cod) is a good option. Another firm white fish that could sub-in is halibut. While halibut is not as buttery, has the right texture and it is much more cost effective option.
What to Serve with Pan Seared Chilean Sea Bass
You can serve it over mashed potatoes, risotto or keep it super healthy with Corn and Avocado Salad, Sheet Pan Green Vegetables or a simple salad. I like a basic arugula salad with lemon vinaigrette dressing and shaved Parmesan.
If you are looking to jazz up the sea bass a bit, you can add garlic and/or capers, or a sprinkling of fresh herbs like thyme or oregano. But I honestly don’t think it needs a thing!

Chilean Sea Bass is naturally buttery and light. It needs nothing which makes this melt in your mouth fish super easy to prepare.
Ingredients
- 1 1/2 pounds Chilean Sea Bass
- 1–2 tablespoons extra virgin olive oil
- Sea salt
- Lemon wedges for garnish and drizzling
Instructions
- Clean the fish and pat dry.
- Sprinkle with sea salt.
- Heat a cast iron skillet over medium high heat. Add the olive oil.
- When the olive oil is hot, place the fish in the pan and cook 4 minutes per side. You want it nicely browned and slightly opaque in the center.
- Serve with lemon wedges.
