Creamy, dreamy Chive Mashed Potatoes with buttery Yukon Gold potatoes, a hint of garlic, milk, butter and chives to finish. These are a must do for holidays or anytime you’re making a roast or just looking for a comfort food side. You can easily multiply this recipe for larger gatherings. And you can make ahead and reheat when you are ready to serve.
Key Ingredients and Substitutions
- Potatoes – Yukon Gold potatoes are naturally buttery so I prefer them to Russet potatoes but you can use Russets as well. The outcome will be more starchy and less rich mashed potatoes.
- Garlic – Just a clove, smashed and cooked in the water with the potatoes for a hint of garlic flavor. You remove the clove before mashing.
- Butter – Softened (room temperature; not melted) and cut into pieces. For vegan mashed potatoes, use vegan butter (and plant based milk).
- Milk – Whole milk will contribute to the creaminess so I would not substitute with lower fat milk. For an even richer mashed, use half & half or heavy cream. For vegan, use plant based milk.
- Chives – I love the flavor and color the chopped fresh chives add but this is entirely optional. You can leave them out if you want.
Preparation
- Put the potatoes, garlic clove and salt in a large pot of cold water over high heat. The water should be just about an inch above the potatoes. Bring it to a boil and reduce the heat and simmer for 15-20 minutes. The time will vary depending on the size of your potatoes. You want them fork tender (you can easily pierce with a fork with no resistance).
2. Strain the potatoes in a colander and remove the garlic clove. Return the potatoes to the pot. Mash the potatoes until most of the steam has released. Then add the butter and gradually add the milk while continuing to mash to desired consistency. I like no lumps, but if you prefer more chunky mashed potatoes, go for it! Last, add salt, pepper and chives and mix to incorporate. Cover to keep them warm or place in a warm oven until ready to serve.
Note: You can make the mashed potatoes a day or two in advance. Just cover and refrigerate. Take the potatoes out of the refrigerator 1-3 hours before re-heating in the stove.

- 1 1/5 pounds (5-6 good sized) Yukon Gold potatoes, peeled and cut in half
- 1/2 teaspoon salt for the water
- 1 clove garlic, smashed
- 1/3 cup whole milk
- 2 tablespoons butter

Instructions
