This bright and delicious Sicilian inspired Tomato Olive Salad is one of my favorites. I was introduced to it a few years ago by my husband’s aunt and uncle, Donna and Ricky. They brought it to our house for a dinner party and I fell in love. I hope you love it too! It is easy to pull together and full of yummy Mediterranean flavors.
Key Ingredients and Substitutions
- Tomatoes – Hothouse or vine tomatoes, seeded.
- Red Onion – Sliced very thin
- Garlic – Minced
- Olives – Cured black olives and Castelvetrano olives (Sicilian green olives). You *could* substitute the cured black olives with Kalamata olives but the flavor won’t be as intense and luscious. Caper berries would also work. Castelvetrano olives are mild and firm. Picholine olives are a viable substitute or Manzanilla’s in a pinch.
- Herbs – Fresh basil and oregano make this salad brighter and more flavorful.
- Dressing – Good quality extra virgin olive oil, balsamic vinegar and red wine vinegar. Preparation
- Cut the tomatoes into bite sized pieces. Slice the onion thin. Mince the garlic. Chiffonade the basil and chop the oregano. Toss all ingredients in a bowl.
- Drizzle with the olive oil and balsamic and red wine vinegar. Toss well to coat, and serve!
What to Serve with Tomato Olive Salad
This salad is a beautiful addition to any barbecue and elegant enough to grace your dining room table. Serve it alongside grilled steaks, chicken, swordfish or burgers. Or try it with this simple Pan Seared Chilean Sea Bass recipe. And you will want a crusty baguette to soak up all of the delicious flavors!

Ingredients
- 5 Hothouse or vine tomatoes (good sized), seeded and chopped into large bite sized chunks
- 1/2 of a red onion, sliced thin
- 1 clove garlic, minced
- 3/4 cup cured black olives, whole or sliced based on your preference
- 3/4 cup Castelvetrano olives, whole or sliced based on your preference
- 1/3 cup basil, chiffonade cut (sliced thin)
- 2 tablespoons fresh oregano, chopped
- 1/4 cup extra virgin olive oil (a rich good quality oil)
- 1/8 cup balsamic vinegar
- 1/8 cup red wine vinegar
Instructions
- In a large bowl, combine the tomatoes, onion, garlic, olives and herbs. Toss to combine.
- Drizzle with extra virgin olive oil, balsamic and red wine vinegar. Toss to coat.
Notes
Serve with a crusty baguette to soak up all of the delicious flavors!
