This pantry friendly Pan Seared Pork Chops recipe is simple and ready in about 15 minutes. Perfect for your busy work week. Just 4-5 ingredients. No chopping, no fuss.
Key Ingredients and Substitutions
- Pork Chops – Pan Seared Pork Chops can be done with boneless or bone-in chops. Boneless pork chops are leaner. Bone-in chops have more fat and thus tend to be more flavorful. Both work depending on your preference. If you opt for bone-in, cook time will be about a minute longer than boneless. Cook time will vary depending on the thickness of the pork chops. You want the chops to be at least 1-1.5 inches thick.
- Spice Rub – This simple rub is made with garlic powder, onion powder, paprika (for a touch of heat), salt & pepper. You can add or substitute depending on your preference. Other spices that work well in a pork rub include: coriander, fennel pollen, sage, oregano, thyme, cayenne or smoked paprika for a more smokey rich flavor. If you go with cayenne or smoked paprika, use 1/2 a tablespoon because the flavor is stronger and will overpower the rub.
Preparation
- Simply mix together a rub of onion powder, garlic powder, paprika and salt & pepper. Generously rub the spice mixture onto the pork chops all over. Then sear in a cast iron skillet in extra virgin olive oil and garnish with chopped parsley (optional) for serving.
- Cook 4-5 minutes per side. You can check the doneness with a meat thermometer. Pork is fully cooked at 145 degrees but they will continue cooking while they rest so I recommend cooking to 135-140 degrees. Then tent and rest for 3-5 minutes.
Note: If time allows, ideally, take the pork chops out of the refrigerator 30 minutes before cooking to get them to room temperature. This will help them cook more evenly for the perfect juiciness throughout. First pat the pork chops with a paper towel to remove excess moisture. This will ensure a nice crust on the outside and super juicy inside.

Ingredients
- 4 boneless pork chops
- 3 tablespoons onion powder
- 3 tablespoons garlic powder
- 3 tablespoons paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh parsley, chopped (for garnish – optional)
Instructions
- In a small bowl, mix together the spices (garlic powder, onion powder, paprika, salt and pepper).
- Pat the pork chops with a paper towel all over
- Evenly press the spice rub over the pork chops.
- Heat 2 tablespoons of extra virgin olive oil in a cast iron skillet over medium-high. You want the oil to be hot and just starting to smoke before adding the pork chops. Add the pork chops and sear on both sides for 4-5 minutes (depending on the size of the chops. You can use a meat thermometer to check for doneness (see note above).
- Remove the pork chops from the pan and tent with foil. Let them rest for 3-5 minutes. Garnish with chopped parsley (optional) and serve.
