Key Ingredients and Substitutions
- Cannellini Beans – You can use any white bean really.
- Pinenuts – Lightly toasted in a small saute pan.
- Extra Virgin Olive Oil – Good quality like Olio Taibi Organic Extra Virgin Olive Oil
- Lemon – Juice and zest
- Rosemary – You can try other herbs if you like. Thyme or sage would work well.
- Cayenne Pepper – Gives the dip a little bite. Alternatively, red pepper flakes, paprika or even a dash of hot sauce.
Preparation
- Drain and rinse the cannellini beans
- Lightly brown the pine nuts in a small saute pan.
- Place all ingredients into the food processor and pulse until smooth.
- Transfer to a bowl and serve with pita chips. You can drizzle a bit more olive oil on top if desired.

- 1 15 ounce can of cannellini beans, drained and rinsed
- 1/3 cup pine nuts, toasted
- 1/4 cup extra virgin olive oil
- Juice and zest of 1/2 lemon
- 1/2 teaspoon fresh rosemary
- Salt and pepper
- 1/4 cup water
- 1/4 teaspoon cayenne pepper
Instructions
- Place the pine nuts in a small saute pan over medium heat, until lightly toasted (about 2 minutes).
- Add all ingredients to the food processor and pulse until smooth.
- Scoop the dip into a bowl and serve alongside pita chips.
