Chive Mashed Potatoes

Description

These creamy, dreamy chive mashed potatoes are made with buttery Yukon Gold potatoes, a hint of garlic, milk, butter and chives.


Ingredients

  • 1 1/5 pounds (5-6 good sized) Yukon Gold potatoes, peeled and cut in half
  • 1/2 teaspoon salt for the water
  • 1 clove garlic, smashed
  • 1/3 cup whole milk
  • 2 tablespoons butter
  • 2 tablespoons fresh chives, chopped
  • Salt and pepper

Instructions

  1. Place the potatoes and garlic clove in a large pot. Fill with cold water to about 1 inch above the potatoes. Add 1/2 teaspoon salt. Bring it to a boil over high heat. Once boiling, reduce the heat to medium, maintaining a low simmer for 15-20 minutes until the potatoes are fork tender (you can easily pierce with a fork with no resistance).
  2. Strain the potatoes in a colander. Remove the garlic and return the potatoes to the pot. Mash the potatoes until most of the steam is released. Next, add the butter and gradually add the milk while continuing to mash to your desired consistency. Add the salt, pepper and chives, stirring to incorporate. Cover to keep warm or place in a warm oven until ready to serve.

Notes

You can make the mashed potatoes a day or two in advance. Just cover and refrigerate. Take the potatoes out of the refrigerator 1-3 hours before re-heating on the stove.
