What is Shrimp Fra Diavolo?
Fra Diavolo is a spicy tomato sauce. It usually has a base of onion and garlic. Wine to bring the richness and the star of the show, red pepper flakes. This recipe also adds fire roasted tomatoes which is a nice touch and adds extra depth to the sauce.
Fra Diavolo can be done with just pasta (no shrimp) if you want an even simpler process with no protein. Or you can go in the other direction and add scallops and/or muscles for a more luxurious seafood Fra Diavolo.
Key Ingredients and Substitutions
- Shrimp – This recipe calls for a large meaty shrimp, like extra jumbo (16:20). Any size will do but preferably on the large side to compliment the rich fiery sauce. You can leave the tail on if you prefer. I remove before cooking to avoid the fuss of cutting them off while eating. You can’t go wrong wither way. The shrimp should be peeled and de-veined.
- Crushed Red Pepper – This is one of the sources of heat in this recipe. It is essential! You can adjust the amount based on your preference. Some possible substitutes include ground cayenne pepper; For even more heat, fresh Serrano, jalapeno or Fresno peppers (chopped).
- White Wine – Look for a crisp, dry wine like Sauvignon Blanc or Chardonnay.
- Fire Roasted Diced Tomatoes – This is the other source of heat and depth. You can also use regular diced tomatoes and add a bit more red pepper flakes to the sauce. Substitute fire roasted (or not) crushed tomatoes for a smooth, less chunky sauce.
Preparation
Let’s talk about the five quick steps to get this special Shrimp Fra Diavolo on the table.
- First start with seasoning the shrimp with salt and 1 teaspoon red pepper flakes. Next, saute the shrimp in extra virgin olive oil for about 30 seconds per side. Remove the shrimp from the pan.
2. In the same pan, saute the onions and garlic in extra virgin olive oil for about 5 minutes. Add the white wine and reduce by half.
3. Stir in the diced tomatoes and tomato paste, salt, pepper, oregano and remaining red pepper flakes (1 teaspoons). Bring it to a boil and simmer for 10 minutes.
4. Lastly, return the shrimp to the pan and cook for another minute. Garnish with chopped fresh parsley (and/or basil). Serve over pasta.

Ingredients
- 1 pound large shrimp, peeled and de-veined
- 1/4 teaspoon salt
- 2 teaspoons crushed red pepper flakes, divided
- 5 tablespoons extra virgin olive oil (2 tablespoons for the shrimp; 3 tablespoons for the onion and garlic)
- 1 medium onion, chopped
- 5 cloves garlic, minced
- 1 cup dry white wine
- 1 15 ounce can diced fire roasted tomatoes
- 1/4 cup tomato paste
- 1/8 teaspoon black pepper (or more to taste)
- 2 teaspoons dried oregano
- 1/4 cup fresh parsley, chopped
Instructions
- Pat the shrimp dry and season with salt and 1 teaspoon red pepper flakes.
- Heat 2 tablespoons extra virgin olive oil in a large skillet over medium heat. Add the shrimp and cook 30 seconds per side, until rich pink. Remove the shrimp and juices to a bowl.
- In the same skillet, heat 3 tablespoons extra virgin olive oil over medium-high heat. Once the oil is shimmering, reduce the heat to medium. Add the onions and garlic and cook for 5 minutes, stirring often. You want the onions soft and light golden brown. If the garlic starts to brown and crisp, reduce the heat. Don’t burn the garlic! Add the white wine and simmer until the wine reduces by half.
- Add the diced tomatoes and tomato paste to the pan. Stir in the salt, black pepper, oregano and remaining 2 teaspoons red pepper flakes. Once boiling, reduce the heat to medium-low and simmer for 10 minutes.
- Return the shrimp to the pan. Cook for about 1 minute until the shrimp is heated through and bright pink. Serve over pasta and garnish with fresh chopped parsley (and/or basil if you prefer).
