Sheet Pan Green Vegetables

Description

Tasty roasted green veggies with just right flavorings of garlic, lemon, tarragon and parsley.


Ingredients

Scale
  • 1 head of broccoli, cut into bite sized pieces (or a 1 pound bag of broccoli florets)
  • 1 bunch brussel sprouts (1 pound)
  • 1 small Vidalia onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon lemon zest, chopped
  • 2 tablespoons lemon juice
  • 1 teaspoon dried tarragon
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons parsley, chopped

Instructions

  1. Preheat the oven at 375 degrees.
  2. Toss all ingredients on a parchment lined baking sheet
  3. Bake for 20 minutes. Toss half way through cooking time to brown the vegetables evenly.

Notes

Alternatively, you can roast your green vegetables in a grill pan on the grill, tossing several times to evenly brown. You want the veggies to soften and have a light brown crisp.
