Description
Tasty roasted green veggies with just right flavorings of garlic, lemon, tarragon and parsley.
Ingredients

- 1 head of broccoli, cut into bite sized pieces (or a 1 pound bag of broccoli florets)
- 1 bunch brussel sprouts (1 pound)
- 1 small Vidalia onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon lemon zest, chopped
- 2 tablespoons lemon juice
- 1 teaspoon dried tarragon
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons parsley, chopped
Instructions
- Preheat the oven at 375 degrees.
- Toss all ingredients on a parchment lined baking sheet
- Bake for 20 minutes. Toss half way through cooking time to brown the vegetables evenly.

Alternatively, you can roast your green vegetables in a grill pan on the grill, tossing several times to evenly brown. You want the veggies to soften and have a light brown crisp.
