Quinoa & Chickpea Salad

Description

This light, healthy quinoa and chickpea salad with mint, cilantro and lime is a perfect dinner side or lunch main.


Ingredients

Scale
  • 1 cup cooked quinoa
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons good quality extra virgin olive oil
  • 1/4 cup lime juice
  • 3 tablespoons cilantro, chopped
  • 4 mint sprigs, stems removed and chopped
  • 1 red pepper, chopped
  • 2 scallions, finely chopped
  • 1 small garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

 


Instructions

  1. Cook the quinoa according to the package instructions. Remove the cover and let it cool.
  2. Add the quinoa to a large bowl. Add the remaining ingredients and toss well to combine.

 

Notes

You can serve the salad after mixing all of the ingredients together but if time allows, cover and refrigerate  for 30 minutes to 1 hour or longer. The flavors will marry and it will taste even better.
